There is a growing trend in Lombardy to adapt local cheeses by including buffalo’s milk. This cheese is clearly inspired by the French Camembert. Yet its characteristics remain true to Lombardy. The use of fat-rich buffalo’s milk which tastes of butter gives the cheese a creamy texture and a slightly fruity flavour.
