This Reblochon de Savoie is a farmhouse product, recognisable by its green casein label. It is made morning and evening in Haute-Savoie using traditional methods at the farm Du Plan in La Clusaz. Each production stage is performed by hand. Once made, the Reblochons are matured in cellars in Farto de Thônes for over three weeks on spruce boards. It’s during this last stage that they acquire the creamy and supple texture, light to saffron yellow rind covered in places with a soft white down, and their typical flavour reminiscent of cream and hazelnut.
