Gorgonzola Dolce DOP is divided into two versions: “with a knife” and “with a spoon”. The difference between the two lies mainly in the texture. The Dolce “au couteau’ version is soft and creamy, but slightly firmer than the Dolce “à la cuillère” version. Its balanced flavour combines tenderness and character. When cut with a knife, Gorgonzola DOP Dolce retains its creaminess while offering better structure. Its paste is soft yet firm, ideal for slicing, cheese boards, or selling by the piece. Easier to handle, it impresses with its balance between smoothness and structure, with just a touch more intensity. 50 days maturation.
