Dairy production. The Ossau-Iraty is a French cheese from the Basque country and Béarn, produced in a very specific area in the PyrénéesAtlantiques department and a small portion of the Hautes-Pyrénées. We have selected this exceptional cheese for you, made from unpasteurised ewe’s milk as opposed to most other Ossau cheeses. It is ripened for 12 months in damp cellars where the optimal quality point is reached: a rich and typical ewe’s milk flavour, firm texture and rustic-looking rind. This is a choice product for dairy mongers with the guarantee of our master cheesemaker. This is a carefully ripened product, however it may present some small holes as is characteristic of long ripening processes.
