A small, colourful soft cheese made from cow’s milk with a melt-in-the-mouth texture, produced in France in the Franche-Comté region. The milk comes entirely from local sources, on average within a 40 km radius of the cheese dairy, and is processed no later than 48 hours after collection. The cheese dairy uses only vegetable rennet to curdle the milk. After two weeks of maturing, the P’tit Roux is carefully brushed to develop a beautiful orange rind and mild yet distinctive flavours. The cheese is wrapped in paper so that it can continue to develop its flavours until it is eaten.
