The Beaufort AOP Chalet d’Alpage Xavier David is a rare cheese. It is made in the Courchevel mountains, one of the last 15 mountain pastures to make Beaufort according to traditional methods: seasonal production over 100 days from June to October and transhumance of the cows between 1500 and 2000 meters above sea level. The cheese matures for at least 5 months and develops sunny aromas, fruity and slightly salty.The pâte is smooth, ivory to pale yellow in colour. On the palate, its texture is firm at first, then becomes melt-in-the-mouth. Beaufort AOP Chalet d’Alpage is appreciated by connoisseurs for its high-quality taste and longer ageing potential.
