Soft cheese with washed rind. Époisses AOP Xavier David is produced by the Germain cheese dairy in Vaux-sous-Aubigny. Here, the cheeses are washed one by one with Marc de Bourgogne five times. This repeated rubbing helps establish and balance the different ripening cultures. Indeed, Époisses AOP Xavier David owes both its flavour and its colour to the ideal balance of two reference cultures: Geotrichum, which brings creaminess and floral notes, and the Brevibacterium linens, which provide the colour, character and typical taste. Thanks to a rigorous and exclusive selection process, we can offer you a cheese with a beautiful brick-red colour and a fine texture, thanks to its 4 to 7 weeks of ripening. ~Orange rind and creamy texture, woodland aromas with a subtle animal note, floral flavour, balanced, slightly lactic on the palate.
