Camembert de Normandie AOP Xavier David
This Camembert has been selected after many blind tastings by our master cheesemaker. The Plessis cheese dairy in Saint loup has been distinguished thanks to its historic expertise and the quality of its milk, which comes from pastures near the sea that are rich in carotene and iodine.When the curd is firm, it is carefully sliced. The Camemberts are then moulded with a ladle in five successive stages, spaced 45 minutes apart, to allow for proper draining and to obtain a soft, creamy texture. On the second day, the cheeses are turned over, removed from their moulds, salted and then placed in a ripening room for three weeks. The best cheeses are then carefully selected and packaged.The Camembert de Normandie AOp Xavier David is creamy and has milky and fruity aromas.
