An exclusive creation by our master cheesemaker. This cheese is a new interpretation of Fourme cheese – based on an original idea by Vincent Christophe and implemented by Christelle Lorho. Produced in Auvergne and refined by Maison Lorho. The idea came almost naturally, but its implementation required patience and determination. Numerous attempts were made to find the right balance between the amount of wine and the maturing time. Ultimately, a four-week maturing period and immersion in Sauternes were decided upon. The result: the taste is reminiscent of a sour candy, followed by the sensuality of a juicy blue cheese, enveloped in sun-dried grapes.
