Semi-hard cheese. As its name says, the Noix Jurassic matures with nut liqueur. This Tommette is formed in a mould that gives it its famous regular concentric lines, reminiscent of a wicker basket. During its 6 weeks of ripening in a humid cellar, the cheese is rubbed 3 times with nut liqueur from La Distillerie du Périgord in the city of Sarlat. This liqueur gives the Tommette its characteristic brown colour and its subtle nutty aroma. The texture is creamy and meltingly smooth. The ivory-coloured paste is soft and delicate.
