This generous cheese, with its unusual shape, always left our master cheesemaker feeling a little unsatisfied: something was missing. This prompted our master cheesemaker to age it, working the ripening cultures in the ripening room. After several attempts, the right process was validated: a maturing period set at 12 months with well-defined ripening cultures that allowed us to achieve the desired result. You can count on its quarterly selection to guarantee exceptional quality throughout the year.
