Founded in 1975, Caseificio Tosi is a hidden artisanal gem in the heart of Italy, born from the vision of Santino Tosi. In the 1980s, his son Fabrizio joined the adventure, followed by his daughter Miranda and her husband Andrea in the 1990s. The family has never stopped evolving while staying true to its core values: tradition, precision, and excellence. Gorgonzola became the house’s flagship – creamy, carefully aged, and full of character. Today, Caseificio Tosi stands as one of the most authentic and respected members of the Gorgonzola DOP Consortium, embodying the artisanal spirit and time-honoured identity of this unique cheese. Each wheel is born from a precise artisanal gesture: milk poured gently into 600-liter vats, soft curd delicately handled and wrapped in linen cloth to protect it and preserve its perfect texture. Manual salting without additives creates a soft, aromatic paste with an ideal balance between saltiness and sweetness. The wheels are rubbed with water and organic honey vinegar – a unique process that cleans the rind and harmonizes the cheese’s acidity. Tosi is one of the last producers to age its own Gorgonzola DOP on wooden boards. Fabrizio Tosi explains: We let each wheel take its time.
