The Sainte-Maure-de-Touraine PDO Farmhouse Xavier David is a raw goat’s milk cheese made entirely by hand at Gérald Brun’s farm. For him, the well-being of his 190 goats is essential (non-GMO, silage-free feed and a spacious goat barn). All steps of the production are manual, especially ladle-moulding. This results in a fine and supple cheese paste, which is then entrusted to the Jacquin creamery for a minimum of 11 days of aging. Sainte-Maure-de-Touraine can be identified by the rye straw running through the center, engraved with the producer’s name. In the past, the straw was used to help support the cheese’s structure—today, it’s a symbol of authenticity!
